We make sure that the dish is prepared in a pit underground to achieve the traditional way of cooking Kuzhimandi. The rice and meats are kept underground for 2-3 hours and slow-cooked to get the maximum flavor. The meat is placed on top of the rice bowl so that the rice can grasp the fat gravy dropped from the meat. This will give rice an authentic taste.
